Forget the Barbecue Sauce Flavored Potato Chip Carbs.

Rather, find enjoyment in the experience of healthy snacks with high protein found in eggs. If you are willing to try easy recipes and you enjoy barbecue sauces, try these pickled eggs. They make a great platter for the family reunion. Or take them along to the office. But don’t forget to include this offering for dinner served to the family.  If you have a jar of them in the refrigerator, there is a good chance they won’t last long once the children find out what they taste like!

Choose a Good Egg for the Family Reunion

As with the other egg recipes I have suggested trying, I again recommend looking into the options of the different value-added egg options of cage free eggs, organic eggs and pasture raised eggs.

And remember the soy free egg option where the hens are fed no soy products, thus keeping clear of the dangers of soy estrogens that sometimes travel on into the food chain of milk and eggs. Or if you struggle with egg allergies, consider using duck eggs.

Follow Easy Recipes to Peel Eggs

Hard cook your eggs and follow the easy to peel instructions where peeling a dozen or 2 of eggs should not take more than 5 minutes. Too often stressful egg peeling dampens the thought of preparing dishes that use hard boiled eggs. But peeling eggs can be so easy. And once you have mastered it, you can involve the whole family in making this delightful recipe. Help children to learn to hard boil eggs and peel them effectively.

Now to the Recipe for the Smokey Barbecue Pickled Eggs.

2 dozen hard cooked, peeled eggs

¼ cup chili powder

¼ cup paprika

¼ cup cumin

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon Cayenne Pepper

2 teaspoons black pepper

1 teaspoon white pepper

1 teaspoon ground ginger

1 teaspoon ground cloves

½ teaspoon celery salt

1 teaspoon celery salt

3 teaspoons salt

¾ cup all natural liquid smoke

1 cup honey

1.5 cups vinegar

1 ¼ cup water

Place the 2 dozen eggs into a wide mouth gallon jar or other tall container. Combine all the other ingredients and mix well. Then pour the brine over the eggs. Additionally, you may want to use a small clean white cloth to keep the top eggs under the brine.

Refrigerate. You should move the eggs in the brine after several hours to create a full surface cover of color and flavor to the eggs. Then keep the eggs in the brine for a minimum of 24 hours before serving. You may continue storing them in the brine up to 10 days.

If you remove all the pickled eggs a few days after you created the brine, you may want to reuse the brine with adding another batch of fresh hard cooked and peeled eggs. Another batch may take a bit longer to flavor well, but they will still be very flavorful. Even a third batch can yield very nice tasting pickled eggs. You may want to add a teaspoon of salt each time you reuse the brine.
