Cheddar — Available in Cow, Goat and Sheep Milk

Most Americans enjoys cheddar. Some like it young and mild. Others prefer a slight sharpness. But usually, real cheese connoisseurs love to pop that well- aged, extra-sharp cheddar into their mouths to savor the coveted, crystallized crunch of quality aged cheddar.

Cheddar is a drier cheese than many that Swiss Villa offers. But as it ages, the texture and taste changes.

A young cheddar is slightly buttery, moist, and slightly melty. Some describe the taste as milky and even slightly sweet. This cheese provides a very mild flavor which many cherish.

Cheddaring, the process of aging cheddar, allows more of the moisture to dry out of the cheese. But it also acidifies the cheese and gives it a unique, elastic texture. And the sharper the cheddar becomes, the more of a crumbly texture you will find. The best of the sharpest cheddars offers a salt-like, mouthwatering crystal. You will likely see some of these white crystals inside the package of our older cheddars; they are nothing to worry about but are instead a sign of excellence.

The pungent flavor grows as it ages for a more robust presentation to those with discerning palates. A stronger, more earthy aroma is born. Good cheddar develops a more complex flavor that is deeper and nuttier. Cow Cheddars

You may notice that Swiss Villa presents more than a dozen offerings of cow cheddars.

A very popular one, the Unsalted Cheddar is sold to low-sodium dieters. Although it lacks salt, it still carries a good cheddar flavor. Swiss Villa offers both unsalted cow cheddar and unsalted goat cheddar. You can purchase them in 8-oz. blocks or a 5-lb. loaf. More recently we have added 2 flavored unsalted cow cheddars. Try the cow unsalted jalapeno cheddar or the cow unsalted garlic & herb cheddar– available in both 8-oz. and 5-lb. offerings. Some robust flavors can counteract the lack of salt in the taste profiles.

Smoked Cheddars

Cow Colby Cheese

Coby, Wisconsin birthed a creamy, semi-soft cheese in 1885. Similarly processed as cheddar, Colby maintains more moisture and has an open texture due to washing the curds in cold water to chill the mixture. Colby tends to be sweeter and less acidic than young cheddar. Colby is very suitable for sandwiches, snacks, and salads. Pair it with rye bread, apples, or pears. Milky, mild, and buttery – choose Colby for the family snacks.

Cow milk Horseradish Fire Cheese carries the properties of Colby. Yet the profiles are very rich from the numerous added seasonings: onion, garlic, ginger, cayenne peppers, and horseradish. All these ingredients have first been bathed for 2 weeks in raw apple cider vinegar and then drained prior to tumbling into the Colby curds for this unique, flavorful semi-soft cheese. Melts well on a grilled cheese sandwich with flavor levels above the norm! Tops off the salad superbly. For those looking for horseradish cheese, give this a try! Not super-hot but a bit of a kick toward the end as you taste the other savory profiles as well. A very nice cheese indeed.

Cow milk Pepper Jack Colby brings that hot pepper kick! So many opportunities to use it, but here are a few. Slice onto burgers for some heat. Cube and munch on it with pretzels. Pair it with a fried egg and bacon for a zesty breakfast.

Cow, Goat and Sheep Gouda

Aromatic with caramel-like flavors, this semi-hard cheese yields a dense and springy texture. Full-fat milk contributes to a Gouda cheese with a very high fat content and creamy texture. Top your pasta dish with Swiss Villa raw milk Gouda when preparing to serve it. Savor Gouda with pumpernickel bread and mustard. Place on a cheese board with cured meats, fresh apples, and peaches. Dried apricots and cherries also pair well with Gouda cheese.

Cow and Goat Havarti

Havarti has a mild flavor like Monterey Jack, slightly acidic, buttery, and sweet to very sweet. The mellow aroma and the semi-soft texture makes a perfect fit for casseroles, quesadillas, and pizza.

Cow Farmers Cheese

This pressed cottage cheese is slightly more acidic with a firmer texture due to lower moisture content. Slavic, Baltic, and Germanic countries offer Farmers Cheese under names such as Twarog, Tvorog and Syr.

Find versatility in Farmers Cheese. Place a slice on your morning bagel or hot toast along with some savory herbs. Blend it with yogurt for a veggie dip. Slice it thinly and roll it with prosciutto. This fresh cheese offers a gooey melt in pierogis and lasagna. You may lightly fry Farmers Cheese and place it on a sandwich.

Cow Yogurt Cheese

Another rich and creamy cheese, Yogurt cheese offers probiotics for better gut health. Once more, the whey is extracted from the cultured curds to form them into a block of semi-hard cheese. Similar in makeup to Middle Eastern labneh, yet more firm with less moisture. Enjoy yogurt in the form a cheese. Great for snacking with pretzels and crackers. Pairs well with fruits and nuts.

Cow and Goat Baby Swiss

Just a little lighter and sweeter than Swiss cheese, Baby Swiss melts easily with its creamy texture and buttery flavor. The smaller holes in baby Swiss cheese form from the bacteria through the same process as regular Swiss cheese but the aging and processing are slightly different, thus yielding a moister and softer cheese.

Baby Swiss pairs well with sautéed mushrooms and scrambled eggs. Baby Swiss is also a favorite for fried cheese sandwiches. Any way you slice it, Baby Swiss is good!

Cow PA Dutch Swiss

Here you will find the more distinctive tones of traditional Swiss cheese. Less moisture brings a harder cheese than the Baby Swiss. Pairs well with walnuts, apples, olives and pretzels.

Cow Meadowrella

Think of mozzarella. This aged, raw milk mozzarella type provides a raw milk cheese for applications where you might otherwise choose pasteurized mozzarella. Many folks have found this cheese to be their favorite!

Cow, Goat, and Sheep Feta

Goat and sheep milk produce a white colored Feta. The carotenoid-rich cow milk produces a yellow feta but all feta is soaked in a salt brine to cure. Being one of the oldest cheeses in the world, feta bears a rich aroma and slightly sour taste.

This salty cheese pairs well with watermelon, tomatoes, cucumbers and bell peppers. Or you may enjoy some almonds and honeycomb and pears as an appetizer. Some folks prefer feta with fish.

Cow and Goat Bleu Cheese

Blue Cheese is distinct in its flavor. Often it brings a reaction either for or against the pungent taste and aroma. The cheese maker inoculates fresh cheese with mold spores; this mold grows in the cheese, causing blue and green coloring and an amazing, powerful punch. Most cheesemongers love Blue Cheese. If you love Blue Cheese, we are confident you will be hooked!

Pasteurized Goat Cheese Curds

Fresh cheese curd cannot be aged for 60 days to qualify for the legal trade. Thus we offer these in pasteurized form. You may want to nibble on them at room temperature or prefer frying these curds.

Pasteurized Goat Chevre

Last of all we will cover the Goat Milk Chevre, which only comes as a pasteurized option.

This soft spreadable cheese often finds it way into upscale eateries. The plain chevre pairs well with fruits and vegetables, and tops off a whole host of dainties.
