How Our Raw Goat Gouda is made

- Coagulation: Next we add microbial rennet which helps the milk to set up and form a curd-like texture.
- Cutting and washing the curds: After the curd is set, we cut them into smaller pieces so the whey can drain off. Then we are able to wash the curds, which gives the goat gouda its distinctive sweet and mild flavor.
- Molding and pressing: Next in our process is to mold and press the goat gouda into a flat wheel shape to remove any excess whey and prepare it for aging.
- Aging: Then we age our raw goat gouda for 60 days to develop a complex flavor profile and to highlight the nutritional benefits of raw goat milk. Finally we package it up and ship it directly for you to enjoy!
