  1. Milking: First we milk the healthy grass-fed sheep at our local farm and leave it unpasteurized so all those healthy probiotics can grow. 
  2. Culturing: Next is to warm the milk and mix it with local cultures for maximum flavor experiences and to allow rich probiotic culturing to take place.
  3. Cutting and molding: Then we cut the curds into small pieces and put them in molds to press out any excess whey. Depending on the kind of raw sheep cheese we are making will impact how we mold and press it. 
  4. Aging: One of the last steps is to put the cheese through a 60 day aging process that will enhance the cheese’s natural flavor and create those slightly nutty, salty, aspects that we love in raw sheep cheese
  5. Packing: Finally, we individually package our raw sheep cheese and sell it to you! From the milking to selling, we are committed to quality each step of the way!
