How Our Raw Goat Feta Is Made

That delicious package of crumbly tangy raw goat feta doesn’t just happen. Here’s our transparent process of bringing raw goat milk from the farm to your table:
Milking: First, we collect the raw milk from our grass and grain fed goats using excellent hygiene practices to avoid any contamination before we culture the milk by gently warming it and adding cultures.
Coagulation: Next we add microbial rennet which helps the milk to set up and form a curd-like texture.
Cutting and washing the curds: After the curd is set, we cut them into smaller pieces so the whey can drain off.
Molding and pressing: Next in our process is to mold and press the raw goat feta into a flat wheel shape to remove any excess whey and prepare it for aging.
Salting: Then our goat feta makes its way into a salt brine which helps its distinctive salty and tangy flavor.
Aging: Then we age our raw goat feta for 60 days to develop a complex flavor profile and to highlight the nutritional benefits of the raw goat milk. Finally we package it up and ship it directly for you to enjoy!
