Health Benefits of 100% Einkorn Sourdough Bread

When it comes to choosing 100% einkorn sourdough bread, there are many health benefits that come with each bite.

Higher Mineral Content

Compared with other common bread flours, einkorn flour has a higher amount of zinc, iron, and manganese. There is also four to five times more vitamin B2 and vitamin B6 in einkorn flour. Eye health is greater in einkorn flour, with a whopping seven times more lutein concentration compared to our flour counterparts. 

Lower Gluten

While 100% einkorn sourdough bread does contain gluten, it is much lower than other breads available on the market. The ratio of gliadins to glutenins is around 2.5 to 1 in regular bread flour, whereas it stays around 12 to 1 in einkorn flour. 

Easier Digestibility

Due to a lower gluten content, some people sensitive to gluten have reported that they were able to digest bread made with 100% einkorn wheat more easily compared to bread made with conventional wheat flour. (Please note that there is gluten in einkorn sourdough bread, although it is less than conventional bread.)
