Packaging and Selling: Then we jar our delicious fermented carrots, label them, and sell them directly to you! 

Lacto-fermentation stage 1: First we brine the carrots and ginger in a simple water and celtic sea salt brine, which allows any harmful bacteria to be killed off by the saltiness. 

Lacto-fermentation stage 2: The healthy bacteria survives the first stage and goes on to convert lactose and sugars in the carrots to create lactic acid, creating an acidic environment that safely preserves the vegetables.
